Ingredients
1 cup low-fat cottage cheese (drained well)
2 egg whites
2 tablespoons chia seeds or flaxseeds
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika (optional)
1/2 teaspoon garlic powder (optional)
Pinch of chili flakes (optional)
Instructions
1. Drain excess liquid from the cottage cheese thoroughly.
2. In a mixing bowl, combine cottage cheese, egg whites, chia or flaxseeds, Parmesan, salt, pepper, and optional spices.
3. Line a baking tray with parchment paper. Drop small spoonfuls of the mixture, spreading thinly.
4. Preheat oven to 350°F (175°C). Bake for 20-25 minutes, flipping halfway.
5. Remove from oven and transfer to a wire rack to cool completely.
Notes
Drain the cottage cheese well for crispy chips.
Spread the mixture thinly and evenly.
Flip the chips halfway through baking for even browning.
Cool completely before storing to maintain crispiness.
