Description
Golden, crunchy onion rings with a low-carb keto coating made from almond flour, parmesan, and pork rinds.
Ingredients
2 large onions
1 cup almond flour
1/2 cup grated parmesan cheese
1 cup crushed pork rinds
2 large eggs, beaten
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Avocado oil or light olive oil for frying
Instructions
1. Peel and slice onions into 1/2-inch rings; separate layers.
2. Soak onion rings in ice water for 20 minutes, then pat dry.
3. Prepare three bowls: almond flour with spices, beaten eggs, and pork rinds mixed with parmesan.
4. Dredge onion rings in almond flour, dip in egg, then coat with pork rind-parmesan mixture.
5. Heat oil to 350°F in skillet or preheat air fryer to 375°F.
6. Fry onion rings in small batches until golden brown, about 2–3 minutes per side.
7. For air fryer, spray with oil and cook 8–10 minutes, flipping halfway.
8. Drain fried onion rings on paper towels; serve hot with dips.
Notes
Serve with garlic aioli, sugar-free ketchup, or spicy mayo.
Air fryer option is lighter but just as crispy.
Best eaten fresh and hot for maximum crunch.
