Description
A flavorful and rich weeknight meal perfect for the whole family.
Ingredients
2 lbs organic chicken breasts
2 Tbsps extra virgin olive oil
1 teaspoon sea salt
2 tsps On Everything All-Purpose Blend
4 Tbsps unsalted butter
4 garlic cloves, minced
1 ½ Tbsps Tuscan Marry Me blend
1 ½ cups organic heavy cream
1 cup organic chicken stock
3 Tbsps white cookinggrape juice + a splash of vinegar
½ lemon, freshly squeezed
1 cup freshly grated parmesan
1 tablespoon organic tomato paste
1–2 cups grape or cherry tomatoes, halved
1 cup organic kale, chopped
Instructions
1. In a large bowl, mix chicken with salt and All-Purpose Blend. Let sit for 5-10 minutes.
2. In a 12-inch skillet over medium-high heat, melt butter and sauté garlic until fragrant.
3. Add chicken and cook until seared, about 3-4 minutes per side. Remove and set aside.
4. In the same skillet, heat 1 tablespoon olive oil, add Tuscan blend and tomato paste, stir.
5. Reduce heat to medium-low, add cream, stock, lemon juice, andgrape juice + a splash of vinegar. Stir until combined.
6. Simmer for 2-3 minutes, then add parmesan, whisk until melted.
7. Add kale and tomatoes, stir, return chicken to skillet. Simmer for 15-20 minutes.
8. Spoon sauce over chicken while cooking. Remove from heat when done.
Notes
Leftovers can be refrigerated for up to 3-4 days.
For dairy-free, use vegan butter and coconut cream.
Adjust spices to taste.
