Description

A quick and comforting dish ready in just 20 minutes.


Ingredients

Scale

1 1/2 lbs ground turkey

1 1/2 cups hot salsa

1 1/2 cups cottage cheese

3 cups fresh spinach

1 tbsp Worcestershire sauce

1/2 onion, diced

1 tbsp butter

1 tsp garlic powder

1 tsp garlic salt

1 tsp crushed red pepper flakes

1/2 tsp dried oregano

1/2 tsp dried basil

Salt and pepper, to taste

Extra virgin olive oil, for cooking


Instructions

1. Heat olive oil in a large skillet over medium heat. Add ground turkey, season with salt and pepper, and cook until browned.

2. Stir in diced onion, garlic powder, oregano, and basil. Cook for 3–5 minutes until onion softens.

3. Add salsa, butter, and spinach; cook until spinach is wilted.

4. Stir in cottage cheese, Worcestershire sauce, garlic salt, and red pepper flakes. Cook until cottage cheese melts slightly.

5. Reduce heat to low and simmer for 5 minutes. Adjust seasoning to taste.

6. Serve immediately.

Notes

Substitute mild or medium salsa to reduce heat.

Serve over rice for a more filling option.
