Description
A healthy twist on classic tots with cauliflower and cottage cheese.
Ingredients
12 oz uncooked cauliflower rice, fresh or frozen
1 cup fat-free cottage cheese
1/2 tsp kosher salt
1/4 tsp dried oregano
1/4 tsp garlic powder
Cooking spray
2 Tbsp Heinz No Sugar Added Tomato Ketchup
Instructions
1. Preheat oven to 425°F (convection) or 450°F (conventional). Line a sheet pan with parchment paper.
2. Heat a large nonstick skillet over medium-high heat and cook cauliflower rice until almost tender, 3 to 5 minutes. Spread on paper towels to absorb moisture. Let cool.
3. Puree cottage cheese until smooth.
4. In a medium bowl, mix cauliflower, cottage cheese, salt, oregano, and garlic powder. Shape mixture into tots and place on sheet pan.
5. Coat tots with cooking spray. Bake until browned, 15 to 20 minutes. Serve with ketchup.
Notes
For a conventional oven, increase temperature by 25 degrees.
Freeze uncooked tots for make-ahead convenience.
