Description

A light, refreshing, and protein-packed cottage cheese salad made with cucumbers, tomatoes, and herbs.


Ingredients

2 cups cottage cheese

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

2 tbsp olive oil

Juice of 1 lemon

2 tbsp fresh dill, chopped

Salt and black pepper to taste


Instructions

1. Chop cucumbers, tomatoes, and onion.

2. Add vegetables to a mixing bowl.

3. Stir in cottage cheese.

4. Season with olive oil, lemon juice, salt, and pepper.

5. Add dill and mix gently.

6. Chill for 15 minutes before serving.

Notes

Use small curd cottage cheese for a creamier texture.

Add avocado, olives, or grilled chicken for variation.

Best eaten fresh but can be stored for 1–2 days in the fridge.
