Ingredients

8 large eggs

1 cup cottage cheese (0%-2% fat)

1/2 cup shredded cheese (cheddar or feta)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Optional mix-ins (up to 1 cup total): chopped fresh spinach, diced bell peppers, broccoli florets, cooked sausage, diced turkey bacon


Instructions

1. Preheat the oven to 350°F and grease a silicone muffin tray.

2. In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.

3. Pour about 1/4 cup of the egg mixture into each muffin cavity.

4. Add your chosen mix-ins and shredded cheese to each cup. Stir gently and top with extra cheese if desired.

5. Bake for 18-22 minutes until the centers are just set. Let cool slightly before removing.

Notes

Store in an airtight container in the fridge for up to 5 days.

Reheat in the microwave for 20-30 seconds before serving.

Can be frozen for up to 2 months; thaw overnight before reheating.
