Light, fluffy, and keto-friendly, this cottage cheese cloud bread is a simple two-ingredient recipe that makes airy, gluten-free rounds perfect for sandwiches, snacks, or sweet variations.
Ingredients
3 large eggs, yolks and whites separated
3 tbsp (51 g) small curds cottage cheese (low fat or whole milk)
Optional: 1/4 tsp cream of tartar
Instructions
1. Preheat oven to 300°F (149°C). Line two baking sheets with parchment paper.
2. Whisk egg yolks and cottage cheese together until smooth.
3. Beat egg whites (with cream of tartar, if using) to stiff peaks.
4. Gently fold egg whites into cottage cheese mixture in 3 batches.
5. Scoop 1/4 cup batter per round onto baking sheet.
6. Bake for 25–30 minutes until golden.
7. Cool completely before removing from parchment.
Notes
Work quickly after making the meringue, as it may deflate.
Use small-curd cottage cheese for the best texture.
Store in an airtight container for up to 3 days.
