Description
A light, protein-rich bread made with whipped egg whites, creamy cottage cheese, and juicy blueberries. Naturally low-carb, gluten-free, and perfect for breakfast or snacking.
Ingredients
4 large eggs (separated)
1/2 cup low-fat cottage cheese
1/2 tsp cream of tartar
1 tbsp honey or maple syrup (optional)
1/2 tsp vanilla extract
1/2 cup fresh blueberries
Pinch of salt
Instructions
1. Preheat oven to 325°F and line a pan with parchment paper.
2. Whip egg whites and cream of tartar to stiff peaks.
3. Blend egg yolks with cottage cheese, vanilla, salt, and honey.
4. Fold egg whites into the cottage cheese mixture gently.
5. Fold in blueberries carefully.
6. Pour into pan and bake 25–30 minutes until golden.
7. Cool slightly before slicing and serving.
Notes
Use full-fat cottage cheese for a richer flavor.
Frozen blueberries work, but don’t thaw before adding.
Serve warm or toasted for best texture.
