Description

Soft, creamy cookies with a delightful chocolate chip surprise.


Ingredients

Scale

2 Tbsp unsalted butter, softened

1/4 cup cream cheese, softened

1/4 cup unrefined granulated sugar

2 Tbsp honey

1 large egg

1 tsp vanilla bean paste

1 cup all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chocolate chips


Instructions

1. Preheat oven to 350°F. Line a large baking sheet with parchment paper.

2. In a mixer, combine butter, cream cheese, sugar, and honey on medium-high speed until pale and fluffy.

3. Add egg and vanilla; beat until well combined.

4. Reduce speed to low; add flour, baking soda, and salt. Mix until just combined.

5. Fold in chocolate chips.

6. Drop dough by rounded tablespoon onto prepared sheet. Bake for 8-10 minutes until edges are golden brown.

7. Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

I used full-fat cream cheese.

Store in an airtight container for up to 1 week.
