A quick and refreshing Mediterranean salad with chickpeas, cucumbers, and feta, perfect for light meals or summer gatherings.
Ingredients
2 cups cooked chickpeas
2 cucumbers, diced
1 cup feta cheese, crumbled
3 tbsp olive oil
2 tbsp fresh lemon juice
Salt and pepper to taste
Fresh parsley, chopped
Instructions
1. Rinse and drain chickpeas.
2. Dice cucumbers into half-moons or cubes.
3. Crumble feta cheese.
4. Whisk olive oil, lemon juice, salt, and pepper to make dressing.
5. Combine chickpeas, cucumbers, and feta in a large bowl.
6. Pour dressing over and toss gently.
7. Garnish with parsley and serve.
Notes
For best texture, store dressing separately if making ahead.
Use block feta for stronger flavor.
Add olives or cherry tomatoes for variation.
