Description
This cheesy ground beef and cauliflower rice casserole is a low-carb, high-flavor dinner perfect for weeknights or meal prep. Easy, creamy, and packed with protein!
Ingredients
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
3 cups cauliflower rice
4 oz cream cheese
¼ cup heavy cream
1 ½ cups shredded cheddar cheese
1 tbsp olive oil
Salt, pepper, paprika to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil and sauté onion and garlic until soft.
3. Add ground beef and cook until browned. Drain fat.
4. Stir in cauliflower rice and cook for 3 minutes.
5. Lower heat. Mix in cream cheese and heavy cream until smooth.
6. Fold in 1 cup of cheddar cheese. Remove from heat.
7. Transfer to a greased 9×13-inch baking dish.
8. Top with remaining cheddar cheese.
9. Bake uncovered for 18–20 minutes, or until bubbly and golden.
10. Let rest for 5 minutes before serving.
Notes
You can substitute cream cheese with Greek yogurt for a lighter version.
Add taco seasoning or jalapeños for a Mexican twist.
Freezes well for up to 2 months.
