Description
These Carnivore Pizza Muffins combine mozzarella and beef pepperoni with a fluffy egg base for a high-protein, low-carb delight.
Ingredients
6 eggs
6 egg whites
4 oz mozzarella cheese, shredded
beef pepperoni slices
1 teaspoon garlic powder (optional)
2 teaspoons oregano (optional)
1/2 teaspoon onion powder (optional)
Instructions
1. Preheat oven to 400°F and grease a muffin tray with cooking spray or melted butter.
2. In a large bowl, whisk together whole eggs and egg whites.
3. Add garlic powder, oregano, and onion powder to the egg mixture and whisk until combined.
4. Pour the egg mixture into muffin tins, filling each cup about 3/4 full.
5. Sprinkle mozzarella cheese on top, then place a beef pepperoni slice on each.
6. Bake for 13-15 minutes until cooked and golden brown.
7. Allow to cool slightly before serving. Enjoy warm!
Notes
Store in an airtight container in the fridge for up to 5 days.
Freeze for up to a month; wrap individually for best results.
