Description

These Caramel Cheesecake Cookies are thick, soft, and layered with silky cream cheese frosting and rich caramel drizzle—just like Crumbl’s signature cookie.


Ingredients

Scale

Cookie Base:

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

1 large egg + 1 egg yolk

1 tbsp vanilla extract

2 3/4 cups all-purpose flour

2 tsp cornstarch

1 tsp baking powder

1/2 tsp salt

Cheesecake Frosting:

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla bean paste or extract

Topping:

1/3 cup caramel sauce

Flaky sea salt (optional)


Instructions

1. Cream butter and sugars until fluffy.

2. Add egg, yolk, and vanilla; beat until smooth.

3. Whisk dry ingredients and combine with wet.

4. Scoop dough, flatten tops, and chill 30 minutes.

5. Bake at 350°F for 10–12 mins; cool completely.

6. Beat cream cheese, sugar, and vanilla until smooth.

7. Pipe frosting onto cooled cookies.

8. Drizzle with caramel and optional sea salt.

Notes

Chill dough for thicker cookies.

Use sea salt for a salted caramel version.

Store cookies in the fridge up to 4 days.
