Description

Crispy oven-baked zucchini fries that are light, flavorful, and perfect for snacking or serving as a side dish.


Ingredients

Scale

2 medium zucchinis, sliced into fries

1/2 cup flour

2 eggs, beaten

1 cup panko breadcrumbs

1/4 cup grated parmesan

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

Olive oil spray


Instructions

1. Preheat the oven to 425°F (218°C) and line a baking sheet with parchment or a wire rack.

2. Pat zucchini dry with paper towels.

3. Set up 3 bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parmesan and spices.

4. Dredge zucchini in flour, dip in egg, then coat in breadcrumb mixture.

5. Place on the baking sheet, spray lightly with olive oil.

6. Bake 22–25 minutes, flipping halfway. Optional: broil for last 2–3 minutes.

7. Serve immediately with your favorite dips.

Notes

Use small or medium zucchini for best texture.

Make ahead: bread and refrigerate up to 24 hours before baking.

Store leftovers in an airtight container and reheat in oven or air fryer.
